      <title>What Makes Michael Kors Happy?</title>

      <description>&lt;p&gt;I just read a great quote from Michael Kors, "Give me a perfect roast chicken, and a room full of women wearing major jewels and I am happy."  I couldn't agree more, especially if I am one of the women wearing major jewels! Well, you know you can stop in Koser Jewelers for the "major jewels," and here is my mother's recipe for the perfect roast chicken. I think this is the epitome of comfort food and an elegant dinner all rolled up in one! Bon Appetit&lt;/p&gt;
&lt;p&gt; &lt;/p&gt;
&lt;p&gt;Gayle's Perfect Roast Chicken&lt;/p&gt;
&lt;p&gt;Preheat the oven to 500 &lt;/p&gt;
&lt;p&gt;Rinse a 4 pound  chicken, dry it. Salt and pepper the inside. (Don't waste your time trussing it. You have better things to do...) Butter the skin, then follow with generous amounts of  sea salt and pepper over the entire surface of the bird. Place the chicken in a roasting pan. &lt;/p&gt;
&lt;p&gt;Put the chicken in the oven, so that the bird is a couple inches from the burner and brown the skin.  Usually around 15 minutes.  Once the skin is brown, turn down to 350 to finish cooking. Usually around an hour. I sometimes have to make a foil tent to cover the chicken if it gets too brown. Chicken should be cooked until 185 degree internal temperature, and  juices run clear. Pull the chicken from the pan and let it settle. &lt;/p&gt;
&lt;p&gt;To make a pan gravy from the drippings, pour off the juices, and separate the fat. Save the fat to make the roux. Put the juices back into the pan. make a roux in a separate pan. Use the chicken fat, and add butter to make 4 tablespoons of fat. Over medium heat, whisk in 5 tablespoons of flour to make roux. Let it turn a light caramel color as you whisk it constantly. Add juices to the roux as you whisk constantly. If too think you may add chicken broth. Season with salt and pepper.&lt;/p&gt;
&lt;p&gt;I generally cut the chicken into pieces before serving. I remove the legs and thighs, and the wings. I then cut along the top, and remove both breasts. I like to slice the breast meat into smaller pieces.&lt;/p&gt;
&lt;p&gt;Serve roast chicken  immediately with a tossed green salad and rice pilaf. Another one of Micheal Kors' rules is to wear black and drink white. And don't forget to wear "major jewels" while dining... it makes Micheal happy.  Enjoy!&lt;/p&gt;
